Chocolate chip and oatmeal cookies

These chocolate chip and oatmeal cookies, will become your go to forever cookies! I promise!

I added old fashioned oats and walnuts to the recipe. They provide great texture and flavor. Plus they are baked at a slightly higher temperature of 375 F. So they turn out slightly crispy on the outside but still soft on the inside. Welcome to cookie heaven!

Equipment:


  • small Ice cream scoop (optional ) I used one slightly smaller than the standard size

  • Baking trays

  • Stand or hand held mixer




Ingredients:


  • 4oz / 113 g unsalted butter slightly softened

  • 1/2 cup sugar

  • 1/4 cup dark brown sugar

  • 2tsps vanilla extract

  • 1 egg

  • 1 cup all purpose flour

  • 1/2 cup old fashioned oats

  • 1tsp baking powder

  • 3/4 tsp salt

  • 1/2 cup semi sweet chocolate chips

  • 1/2 cup chopped walnuts

Method


  • Preheat oven to 375 F

  • Line a baking sheet with parchment paper

  • Measure the dry ingredients, oats, flour, baking powder and salt into a bowl and set aside

  • Mix the butter and sugars in a mixer fitted with a paddle attachment

  • add the vanilla and egg and mix

  • add the dry ingredients and mix

  • lastly add the chocolate chips and walnuts and combine

  • scoop the dough out with an ice scream scoop onto the baking tray



  • bake for 5 mins turn the tray around and bake for another 5 mins, until golden brown
