Coconut Macaroons


These Coconut Macaroons are quick and easy baking at its best! Just a few ingredients and they are so yummy! I grew up eating these, so I felt nostalgic when recreating the recipe.

For a presentation idea I colored them in shades of pink! How sweet is that !



Total Time:


  • Prep time 10 mins

  • Baking time 18 mins

  • Total time 28 mins


Equipment:


  • Baking tray

  • Parchment paper

  • Mixer

  • Ice scream scoop (optional)


Ingredients:


  • 2 egg whites

  • 1/4 tsp salt

  • 14 Oz unsweetened coconut

  • 10 Oz condensed milk

  • 1 tsp vanilla extract




METHOD:


  • Preheat oven to 325 F

  • Line a baking sheet with parchment paper and set aside

  • Mix the coconut, condensed milk and vanilla extract together

  • Whip the egg whites and salt till stiff peaks

  • Fold the egg whites into the mixture

  • Add few drops of food color and mix in (optional)

  • Using and Ice cream scoop, scoop out mixture on to baking tray

  • Bake for about 18 mins till the coconut starts turning golden brown
