Lotus Biscoff Balls

Who is a Lotus Biscoff cookie fan ??! I am ! Hope you are too because these energy balls are yummy and perfect little pick me up energy bites.

For a presentation idea I turned them into little hedgehogs. They are adorable and would put a smile on anyone's face!

Total Time:

• 20 mins

Equipment:

• Ice cream scoop

• Piping bag

• wilton no. 7 round piping tip

Ingredients:

• 1 cup quick oats

• 1/2 cup shredded coconut

• 1/2 cup mini chocolate chips

• 1 cup Biscoff cookie butter spread

• 1/4 cup honey

• 1 Tsp vanilla extract

If making hedgehogs

• 1/2 cup extra Biscoff cookie butter for piping

• a few hershey's kisses for the noses

• a bit of black fondant for the eyes

Method

• Simply mix all ingredients together in a bowl

• Scoop into balls using an ice cream scooper.

• Store in the fridge to enjoy later

• If making hedgehogs.. whip the 1/2 cup biscoff cookie butter and whip it till it changes color and becomes fluffy

• Add to piping bag fitted with a wilton no. 7 tip

• Pipe on to the balls, to resemble the hedgehog spikes

• Roll black fondant for the eyes

• Using the Biscoff spread as glue attach the eyes and Hershey's kiss nose

• Crush some Biscoff cookies and sprinkle on serving platter (optional)
