No bake berry jelly cheesecake


This berry jelly no bake cheesecake tastes just as good as it looks!

In three easy steps you will have a beautiful and yummy dessert.

First the berries (strawberries and raspberries) are set in jelly /gelatin

Then the graham cracker and butter crust, and the last step is the creamy and delicious no bake cheesecake. This recipe is made to be served in clear cups. I hope you try it!

Equipment:


  • 6 clear cups or glasses

  • cup cake tray or mini loaf pan tray

Ingredients:


  • Berry Jelly

  • 3 cups strawberries and raspberries

  • I cup room temperature water

  • 3 cups boiling water

  • 30 g powdered gelatin

  • 2 Tbsp lemon juice

  • 4 Tbsp sugar

  • Graham Cracker Crust

  • 2 cups/ 190 g crushed graham crackers

  • 8 Tbsp melted unsalted butter

  • Cheesecake

  • 16 oz/453g cream cheese at room temperature

  • 14 oz/397g sweetened condensed milk

  • 1 tsp vanilla extract

  • 3 Tbsp lemon juice




METHOD:

Set up your cups. wedge them in a cupcake or mini loaf pan tray at an angle and set aside

Berry Jelly

wash and dry the berries, slice the strawberries

mix the gelatin with 1 cup of room temperature water and let in sit for a minute

Add the 3 cups of hot water and let cool slightly

Add some fruit to each cup, fill about half the cup and pour the gelatin in to cover it, let it set in the fridge for 2 hrs


Graham cracker crust

crush the crackers in a food processor or put them in a zip lock bag and bang with rolling pin or spoon

mix in melted butter

press a thin layer of this crust on top of your set jelly in each cup and refrigerate while you make the cheesecake


Cheesecake

Beat the cream cheese a little and condensed milk and vanilla and beat till combined

Add the lemon juice, mix till everything is combined

spoon in this cheesecake mixture into the cups and let them set in the fridge for at least 2 hrs
